Easy Summer Weeknight Meal (on Repeat) | Summer Dinner Ideas

Summer can be a challenging season for dinners if you don’t feel like heating up your kitchen with a lot of cooking.  This easy summer meal has been on repeat at our house and is perfect for those days when you don’t feel like cooking but don’t want a traditional salad.

Chicken Salad over lettuce with Fruit

I know, I know.  This isn’t anything new or groundbreaking.  It is, however, a tasty and filling meal that requires no cooking and very little prep with the right ingredients.  It’s also a combination that you can regularly change up for variety and to fit the tastes of everyone in your family.

The secret to this meal for my house is using a store-bought rotisserie chicken.  For two people, these ready-to-eat chickens offer us enough chicken for a few meals, making them easy and economical and oh, so good!

Chicken Salad

For the chicken salad, I love changing up the ingredients.  From grapes to apples, a little egg or nuts, dried cranberries or fresh herbs, mixed with a base of mayo, greek yogurt, or ranch dressing.  The options are endless.

Fruit Salad

Similarly, with the fruit, I like to use what’s readily available in in-season.  Our local farmer’s markets are full of melons,  peaches, nectarines, plums and blueberries right now.  Store-bought strawberries, apples or whatever you like combine for the perfect fruit “salad” that is perfect on the side.

Lettuce of Choice

When it comes to the bead of lettuce, use what you like.  From your favorite bagged mixture to a few leaves of regular iceberg lettuce.  B and I really love the butterhead lettuce so that’s what I’ve used here.
